Made with Syrah, Cabernet Sauvignon and Cabernet Franc, Réserve du Couvent, which was first launched in the 80’s, is one of Château Ksara’s most iconic wines.
It has a deep cherry hue with a brooding nose of dark fruit underpinned with notes of menthol and green pepper. In the mouth, there is freshness, excellent fruit with a sustained finish. In terms of build quality, the wine is rounded, and structured with nicely integrated tannins.
Réserve du Couvent starts life during harvest in late September when the grapes are picked before being destemmed and fermented. The free run wine is separated from the press wines before the malolactic fermentation takes place. After racking (the removal of clear wine from sediment) and the Cabernet Sauvignon and Syrah are matured in oak barrels while the Cabernet Franc matures in vats. After 12 months, the wines are blended, fined and bottled. Réserve du Couvent should be served at 15 to 18°C depending on the time of year and can age for up to five years.
